Ramen Danbo (Robson)
Fukuoka-style tonkotsu ramen on Robson — slow-simmered pork-bone broth, customizable noodle firmness, and the downtown flagship of a 3-location Vancouver operation.
Ramen Danbo on Robson Street is the downtown flagship of a Fukuoka-style tonkotsu ramen operation with three Vancouver locations (Robson, Kitsilano, North Vancouver), plus outposts in Seattle and New York. The Fukuoka style is Kyushu-specific: milky-white tonkotsu broth made from pork bones simmered for 18+ hours, thin straight noodles, and a distinctive customization system where diners specify noodle firmness, broth richness, and optional toppings at the counter.
The Robson location opened as the second Vancouver outpost in November 2015 and has remained one of the busiest ramen shops on the downtown strip. Hours are 11 am to 11 pm daily, which is generous for Vancouver ramen (many specialty shops close by 9 pm). No reservations — walk-in only, with queue times ranging from 10 minutes at off-peak to 30–45 at Friday/Saturday dinner. The line moves faster than it looks; service inside is efficient.
The classic tonkotsu is the baseline order for first-timers. The spicy tantanmen is the other frequent pick. A vegan ramen version is available and has an actual following — rare among Vancouver ramen shops where "vegan" usually means a weak watered-down broth. Ramen Danbo won Bronze in the "Best Ramen" category at the 2018 Vancouver Restaurant Awards and remains on shortlists for the Vancouver ramen conversation.
Pricing sits at the specialty-shop standard: $17–22 per bowl. Adding gyoza ($7–9), karaage chicken ($9–11), and a drink brings a solo dinner to $28–36 total. Family-friendly environment; kids' portions available. Pickup and delivery available through the restaurant's own system plus Uber Eats.
